Beets Dry Curry /Fry

Beets /beet root is a sweet root which can be used in soups, curry, or can be consumed boiled , or in salads depending upon preference. I have shared  one good recipe with beets long time back  which is a combinations of reds and greens .

 It is one super food that has to be in your plate regularly .
As this root vegetable has a strong sweet  taste inherited in it, I am much afraid to experiment. Finally  I have tried this recipe , which gave a distinctive  and a new taste to sweet beets.
As the final product is much spicy and combined flavors of all spice powders are note worthy, the sweetness of the beets is remarkably very low.
Now this dish has become one must haves in our menu .
This goes very well as a side to rice, sambaar, rasam, or roti .Or you may enjoy it as an appetizer too.




Ingredients:
Beet roots 3 to 4 medium sized chopped into squares
Green chilies 4 to 5 as per taste
Curry leaves few
Spring Onions chopped finely 4 to 5 tablespoons
Garlic cloves chopped finely  4 to 5
Turmeric a pinch
Salt as per taste
Oil 2 tablespoons
Cumin+Coriander powder 1 tablespoon
Garam masala 1/4 teaspoon
Red chili powder  1/2 teaspoon
Coarsely done Roasted chickpea flour 2  large tablespoons
Chickpea Flour  (Coarse ) 1/4 cup
Dry Coconut powder (optional) 1 tablespoon
Cashews few (for garnishing)
Lime juice 1 to 2 tablespoons (according to taste)

Tempering:
Mustard seeds 1/2 teaspoon
Cumin Seeds 1/2 teaspoon
Black Gram 1 tablespoon
Split chickpea 1 table spoon

Procedure:
Step 1: Peel & rinse the beets . Now chop them into cubes.Boil them with sufficient water until they become soft , when done drain the water and set aside.
Step 2: In a saute pan , add in taken oil , then tempering . When tempering sputters , add spring onions, garlic pieces and fry until garlic pieces turn golden brown.

Step 3: Now add in the boiled beets , and fry for 5 minutes.

Now add in salt, turmeric and cover it with a lid and cook , so that the beet absorb the flavors.

Step 4: Add in cumin+ coriander powder, garam masala and toss well.

Finally add in the gram flours and toss well until each piece is well coated with  flour.Fry for 5 minutes or until the flour gives out roasted fragrance


Step 5: When done , switch of the stove, dish it out and squeeze in some lime juice . Garnish with few roasted cashews and serve hot .



Notes:

  • You can add in any powders like Sesame seed powder, groundnuts powder, dried coconut powder, curry leaves powder or curry powder or poppy seed powder
  • You can add in some salt while boiling the beets, but adjust it while preparing the curry
  • Throw in some roasted peanuts or salted peanuts for extra crunchiness
  • If you want to serve this a appetizer slice the beets into long and thin pieces ,and serve with chopped onions,along  with onion coriander and lime salad   
  • You can add amchur instead of lime juice 
  • Use coarsely done powder for extra texture rather than finely done powders
