Aloo Palak


Today I thought of posting one of my  vitamin and nutrients rich dish with Spinach  and Potatoes,spinach is really rich in  tons of nutrients,it is rich in Vitamins A, C, and K, and is an excellent source of Iron and Folic Acid. Spinach is also a good source of Omega 3 fatty acids.  Potatoes are a good source of Vitamin C and Fiber.

Aloo Palak with roti is really a yummy combination, and this is one of my favorite recipes.This really tastes the same as of the fine dine restaurant dish ,try it and you will really agree to what I said .

Aloo Palak
Ingredients:
Fresh Spinach   82 gms or roughly 3 OZ
Potatoes 2 medium
Tomato 1 medium
Onions 1 medium
Ginger garlic paste 1.5 table spoons
cilantro 1/8 cup chopped
Fried Onions 4 table spoons
Anistar 1 large
Cardamon 3
Cloves 3
Cinnamon stick 2
Ghee/Butter 1.5table spoons
Green chilies 8(hot)
Canola Oil 2 table spoons
Cashews 3table spoons (chopped)
Raisins 12or 13 (count)
Sugar a pinch
Salt for taste
Red chili powder 1/2 tea spoon(hot)
Cumin seeds for seasoning

Cooking  Time and Calories
Preparing Time :15 Minutes
Cooking Time:25 Minutes
Calories:250 calories per 100gms

Method:
Step1 : Peel the potatoes and dice them. Boil them in microwave oven at high for about 6 minutes (don't add salt) and set a aside.
Step 2: Now take a blending jar , add ginger garlic paste ,coriander leaves,fried onions,green chilies and blend it very smooth and keep at a side
Step 3: Now take another blending jar and add roughly chopped spinach and a half piece of  taken onion and blend it .DON'T add any water to it ,if needed add a little salt and blend into a smooth paste
Step4: Now take a skillet add  ghee ,oil and when it is ready add the cardamon ,cloves,anistar ,cinnamon(break into small pieces),jeera .
Srep5:When masala sputters add the ground masala paste of ginger garlic ,fried onions ,cilantro ,chilies and  fry until oil oozes out,now add the spinach paste and cover it with a lid
Step 6:Now blend the cashew pieces and raisins into a smooth paste and add to the curry and cook  until the mixture oozes oil
Step7: Now add  the tomato puree to it and cook for 5 min .Finally add boiled potatoes,a pinch of sugar and salt for taste ,red chili powder and cover it and cook for 10 more min
Step8:serve hot with rotis

Note:
  • Prepare a salad with  the remaining Onion piece,salt,cilantro and lime juice and serve it along the curry or just sprinkle on the curry while serving
  • If you feel that adding tomato to spinach is really not good add aam choor powder of about 1/2 table spoon or use Yogurt while cooking ,the point is to get the sour taste to the curry
