Ingredients:
4 cups-basmati rice
1cup-boneless chicken
1/2cup-shredded carrot
1/2 cup-spring onions
4 chopped green chillies
3-red chillies
1tsp-olive oil
2tsp-coriander seeds
1/4-mustard seeds
1/4tsp-fenugreek seeds
1tsp-urad dal
pinch turmeric
pinch-hing
3 cardamom
4 cloves
1/2inch cinnamon
Salt to taste
pinch-sugar
3tbsp-lemon juice

Procedure:
Step 1:Mix the salt and sugar with the lemon juice. Set aside
Step 2: Grind the green and red chilies, coriander seeds and turmeric to a fine paste, adding water as required.
Step 3:Heat the oil in a pan. Add the mustard seeds, urad dal and fenugreek seeds and saute.
Step 4:Stir in the hing,cardamom,cloves,cinnamon and saute for few seconds.
Step 5:Now add chicken pieces and fry it well
Step 6: When the chicken changes its texture add carrot and spring onions.
Step 7:Saute them well
Step 8:Add the masala paste and mix well.
Step 9:Add the rice and lemon juice mixture and mix lightly. Cover and cook until everything is heated through.

Note:
- The masala paste can be stored in refrigerator for 10days which reduces your preparation time.
- You can also add mushroom,paneer,soya chunks etc.
