Eggless Chocolate and Dry fruits Cake in Microwave Oven

Chocolate with dry fruits is really the best combination and when that comes to a cake they really add good flavor.
A 15  minute cake recipe that every one should  try.
I thought cake without eggs may look more dense and less moist but to my surprise this turned out to be spongy with  almost same texture of a cake , I think every one should give a try to this simple recipe.

Ingredients:


All purpose flour 1 1/2 cup
Sugar 1 Cup
Milk(Boiled) 1 cup
Instant Coffee Powder  1/2 table spoon
Baking Powder 1/2 table spoon
Olive Oil 3 to  table spoons
Cocoa Powder or Dark Chocolate 3 table spoons
Tuti Fruti 2 table spoons
Almonds & Cashews crushed 5 table spoons
Raisins  slit 2 table spoons
Cherries for garnish
Optional
 vanilla essence
Vanilla Ice cream for serving

Cooking Time:
Preparation Time :10 minutes
Cooking Time : 5 minutes
Cooking Time :20 minutes

Procedure:
Step1 : Mix all the dry ingredients and set aside .




Step 2: Mix milk with powdered sugar and stir well

Step 3: Now  mix the dry ingredients with wet and beat continuously  so, that no lumps will be formed


Step 4: Grease a micro wave safe bowl with oil and pour the batter into it and microwave it for 5 minutes at high

 
Step 5:  Insert a tooth pick or knife to check the cake . If not done micro wave it for another 2 minutes Cool the cake garnish it with icing sugar and cherries .

Note:
  • Baking Time may vary depending upon your oven.
  • The cake looks a little dense with less air gaps becoz of milk and lack of eggs 
  • Tastes best when served with vanilla ice cream
