Stuffed Bell Peppers


When I clicked this picture I have no idea that this would turn out this amazing !!!!!! Then came a little rhyming poem into my mind




Red is a tomato
Red is a pepper
Red is a beet
Red is a radish

Orange is a carrot
Orange is an apricot
Orange is a pumpkin
Orange is a squash

Yellow is a lemon.
Yellow is potato.
Yellow is a corn,
Yellow is a bell pepper

Though my finished product lacked the color of it's origin , it tasted wonderful.



These stuffed bells can be served as in main course of meal or a side dish to any flavored rice or sambar or just as a appetizer . With this easy , gluten free , anti oxidant rich and less fat recipe you can enjoy all the flavors ........
The cooking time is even less than 30 minutes ,a yummy must haves especially when arranging a potluck .





Ingredients:

Bell peppers (red, yellow,orange)
Finely chopped / minced onion (preferably red ) 1 cup
Garlic cloves finely minced 2 table spoons
Chopped Coriander 1/4 cup
Cumin Seed 1/4 teaspoon
Salt for Taste
Garam masala  1 teaspoon
Turmeric 1/4 teaspoon
Red chili powder for taste
Chick peas flour 2 to 3  table spoons
Oil 2 to 3 table spoons


Procedure:
Step 1 : Rinse and wash bells, then core them .


Step 2: Now in a bowl add all the ingredients taken except for the oil and mix well using a spoon . DON'T add any water as, the onions produce enough moisture for the mixture, if you add water the mixture after cooking gets very hard .

Step 3: Now stuff  the bells with the mixture .


Step 4: Heat a pan, add oil , when ready and not smoking , add the bells and fry them until lightly brown .


Step 5: Now cover the peppers with a lid and cook for another 15 minutes. After 15 minutes take out the lid and cook them uncovered.
This is done  to  cut any moisture (excess) , as even after cooked the mixture should look dry and loosely packed like powder .



Step 6: Switch off the stove and serve hot .




if you  cut a bell into half , it should look like this , the mixture should be cooked but should  not be mushy



Notes:

  • In step 5 after cooking with a lid, you can transfer them into a oven and bake them until done . If excess moisture retains it looks more mushy .
  • Do opt for more spices ,as the bells are a little sweet in nature.
  • You can prepare same recipe with Okra too .
