Authentic dish with the aroma of different spices in it.
Ingredients:
For Marinating:
1lb-mutton
Few Coriander leaves
1 cup- curd
1 tsp- turmeric
2 tsp- squeezed juice
Few Mint leaves
4 green chillies slit
1/2 cup- fried onions
3 tsp- ginger garlic paste
1 tsp- garam masala powder
1 tsp- red chilli powder
2 tsp- salt
For Biryani:
4 cups basmati rice
1/2 cup- fried brown onions
Few Coriander Leaves
3 Tbsp lemon juice
4 green chillies, slit
1 tsp black cumin
Few Coriander Leaves
10 cloves
10 cinnamon sticks
2 anise star
10 cardamoms
1 tsp black peppercorns
Few saffron strands (Soak them in hot milk for 5min)
1 Tbsp red chilly powder
1/4 tsp turmeric powder
Ghee/Butter for taste
Cooking Time:
Preparation Time: 20min
Marination Time: 5 hrs in a refrigerator
Cooking Time: 3min
Procedure:
Step 1: Grease large baking tray with oil.Mix all the marinate ingredients and mutton in a baking tray and leave it for 6-8hrs in a refrigerator.
Step 2: Soak rice for half an hour.
Procedure:
Step 1: Heat water in a separate vessel along with oil, salt, whole spices, green chillies, few coriander and mint leaves. Let it come to a boiling point.
Step 2: Add rice and cook it for 5min until it is 50% cooked.
Step 3: Drain the rice in a colander. Now put rice on top of the mutton to form a layer.
Step 4: Now spread some coriander leaves, mint leaves, brown onions and garam masala on top.
Step 5: Sprinkle some ghee and saffron milk on top of the rice.
Step 6: Preheat the oven to 400 degrees F.
Step 7: Cover the tray with aluminum foil. Bake it for 30min.
Aroma of biriyani spreads across the room which indicates Mutton Dum Biriyani is ready to serve.
Mix the rice well and serve it with Mirchi ka Salan recipe.
Note:
Steps to cook on stove:
- Place the pan over the dosa pan to avoid direct heat.
- Cook at high heat for 5 min
- Now reduce the flame and cook it for 45min.
