Spicy and yummy pulao ready in minutes .
Pulao is one of the easiest and delicious recipe . In general green peas are added in addition to other veggies while preparing pulao , but I thought of making all alone with green peas with some carrots n beets added to get extra texture along with flavor. This can be a easy & quick lunch box recipe too.
Ingredients:
For Masala :
Fennel Seeds 1 table spoon
Poppy Seeds 3 large table spoons
Cloves 4 to 6
Cardamon 5 to 8
Cinnamon stick 2 large made into pieces
Pepper corns 5 to 6
Bay leaf 1/4 of a leaf
Ani star 1/2 of a piece
Coriander seeds 2 table spoons
Cumin seeds 1 table spoon
Green Chilies 5 to 6
Onion large 1 cut into pieces
Garlic cloves 20 or depending upon taste
Ginger 1 small piece
Chopped Carrot 1/2 cup
Chopped Beet 1/4 cup
Green peas 1.5 cups
Sliced Onions 1/2 cup
Basmati Rice 1 cup
Cashes few
Canola Oil 5 table spoons
Ghee (Optional 1table spoon
Turmeric 1 pinch

Preparing Time : 20 minutes
Cooking Time : 30 minutes
Procedure:
Step 1: Dry roast all the whole garam masala seprately as shown .
Now cool the roasted masala , separate the bay leaf and blend all the other ingredients along with onions, ginger , garlic and green chilies into a smooth paste .
Step 2: Add oil into a pressure cooker , when ready add ghee and cashews , when cashews turn golden brown add the masala paste and fry until it oozes out oil.
Step 3: Now add chopped beets fry for 5 minutes and then the remaining veggies . Add salt and cover it with a lid for 5 to 8 minutes until onions turn translucent .
Step 4: Wash and rinse basmati rice , add it to the the masala, give a good stir carefully. Adjust salt according to taste . Now add 1.5 cups of water and a pinch of turmeric powder give a good stir and cover it with cooker lid .
Step 5: Let it cook in high flame until you get pressure and then sim it to the low flame and cook until 3 whistles . Let the steam escape and serve hot with raita .

- You can store the masala prepared for making curries or gravies or any flavored rice
- You can add onion paste instead of mixing it with masala paste.
- The shown recipe is for two servings , so adjust the ingredients according to your servings.
