Eggplant Parmesan (Cutlet)

Preparing Time: 10 minutes

You might be wondering do people prepare a snack with Egg plant and the answer is -YES
 I have first tasted this in an Italian Restaurant and was mesmerized to its taste , they served it with parmesan cheese as a dressing  , but I excluded ( in perspective  of  spiciness )   while serving this dish .
This is a perfect snack or an ideal  break fast recipe depending upon your preference  , you can take it along with a bread or all alone by itself .






Ingredients :

Egg Plant 1 (Medium or Large)
Parmesan Sauce (Click ingredient  To get the Procedure for sauce )  2 table spoons
Onion 1 small
Garlic Powder 1/4 teaspoon or Garlic Cloves 2 minced 
Parsley 1/4 chopped
Cilantro 1/4 chopped
Tomato Sauce 1.5 table spoons
Bread Crumbs 1/4 cup
All purpose Flour 3 table spoons
Egg 1 (or you can replace egg with 1 teaspoon of baking soda +1.5 table spoon of  Olive Oil +1.5 Table spoons of Water )
Grated Carrot 3 table spoons
Olive Oil 6 table spoons
Salt for taste 
Pepper Powder for taste 

Cooking Time & Calories :

Preparing Time : 10 minutes 
Cooking Time : 35 minutes 
Calories: 60 to 70 per piece 

If baking ::

Baking Temperature : 400 F
Frying Time : 2 to 5 Minutes 
Baking Time : 5 to 7 minutes 

Method : 

Step 1: Grate a small onion , you can add  amount of  onion ( or you can use Onion Powder 1 table spoon )  according to your taste .

Step 2:Take all purpose flour in to a bowl and  add parmesan sauce, tomato sauce , chopped parsley , cilantro , garlic and grated  onion .Give it a quick stir and set aside .

Step 3: Take a Egg and whisk it in a bowl , (I have used the baking powder substitute and turned out to be awesome ) 

Step 4: Now add the flour to egg and beat it thoroughly.Add salt and pepper for taste . 

Step 5: Chop the taken egg plant into round pieces with about a .5 inch thickness 

Step 6:  Now dip the chopped egg plant in the batter , let it drip the excess batter , then roll it in bread crumbs 

Step 7: Now heat a pan or a griddle add a table spoon of olive oil and fry the egg plants on the pan until they turn mushy and gold brown color .Add a little  while turning the cutlet as bread crumbs make it look dry 

Step 8: Top it with  some tomato sauce / parmesan sauce  , parsley and grated carrot  .



Baking the Dish:

Step 1: Preheat the oven to given temperature 

Step 2: Heat a flat frying pan add  a table spoon of oil and fry the egg plant both sides for 2 minutes 

Step 3:Take a baking sheet grease it with some oil, place the eggplants on the sheet and sprinkle some grated parmesan sauce and cheese on top of each cutlet 

Step 4: Cover it with a aluminium sheet and bake for about 5 to 7 minutes 

Step 5: Top it with tomato sauce , parsley and grated carrots while serving  




Notes :

  • You can add cheese to the dish according to your taste even when you prepare it on stove top
  • When you are using a stove to prepare just let the griddle get hot , then simmer the flame and place the egg plant cutlets and fry them in medium flame . Each one may take about five minutes to get cooked 
  • Add about a table spoon of oil after when the griddle gets hot enough or right before adding the cutlets and while turning the cutlet add or spray a little more to give it the perfect texture 
  • If you bake or fry it both taste same , but when you fry the dish will be crispy .
  • The egg plant turns very mushy or smooth after cooked check if you have a doubt whether it is done or not , you even check if the outer layer of egg plant turns a little dark color (usually dark purple ) to see if its done 
  • When you use the substitute to egg use some water for preparing the batter , as I have said I have used the substitute .
