Roasted Bell Pepper Pasta

Scrumptious is the word given to this recipe. Easy to prepare and takes very less time.


1 cup- Diced bell pepper
1/2 cup- onion
4 minced garlic cloves
Pepper to taste
Salt to taste
1 cup vegetable or chicken broth
Oregano to taste
Parmesan Shavings to sprinkle on top
2 tsp- Minced Spring Onions

Preparation Time & Cooking Time:
Preparation Time: 20min
Cooking Time: 15 min

Step 1: Bring a large pot of water to a boiling point. Cook pasta in boiling water until 10 min.
Drain and keep it aside.
Step 2: In a skillet add olive oil over medium flame. Add onion and garlic and saute them for 3minutes.

Step 3: Add the chopped bell pepper and saute them for another 3 minutes.

Step 4: Remove the pan from heat and transfer the mixture to the blender. Blend it completely to form a puree.
Step 5: Heat olive oil in a pan, add springs onions and slightly saute them for few minutes.

Step 6: Pour the puree into the pan and let it cook.

Step 7: Add the broth, salt, and pepper, and stir until cooked.
Step 8: Now add pasta and stir well. Add Parmesan and oregano, then stir it together to coat the pasta. Serve Hot.




  • You can add butter instead of olive oil.
  • Splash in little cream which gives rich taste.
