Aloo Methi Kofta (meat balls) Curry (Without Cream)

This is a delightful vegetarian dish with meatballs in spicy gravy .You might have cooked Kofta curry with malai which  undoubtedly have the yummy flavor , so i thought of cooking it a little healthy without the cream .This is a very tasty and easy recipe hope you will enjoy it . 


Ingredients:
For Koftas:
 Peeled and mashed boiled potatoes 1 cup
 Carrots and beets boiled and mashed 1/2 cup
Coriander powder 1 tsp 
 Red chili powder(optional) 1/2 tsp
 Garam masala  1 tsp
Kowa (unsweetened) 5 table spoons 
Saffron a pinch
Green chilies 6
Ginger sliced  1.5 table spoons
Coriander 1/8 cup chopped
Salt to taste
Canola oil for deep fry
For Gravy:
 Canola Oil 5 table spoons
 Ghee 2 table spoons
 Cumin seeds ½ teaspoon 
 Cloves 2-3
 Bay leaves 3 
 Small sticks of cinnamon 1-2
Chilly powder ½  teaspoon 
Turmeric  ½  teaspoon 
Fried Onions 5 table spoons
Green chilies 6
 Garlic 8 cloves
 Ginger piece 
 Onion 1
 Garam masala 1/4 teaspoon
Yogurt 1 tablespoon
Kasuri methi 1/4 teaspoon
Sugar 1 teaspoon
Cashews ,Almonds 1/2 cup
Coriandr powder 1/2 teaspoon
Coriander 1/8 cup chopped

Cooking time and Calories:

Preparing Time:30 Minutes
Cooking Time : 30 Minutes
Calories :180 Calories for 3 Oz serving 

Method:
For Kofta:
Step 1: Take the green chilies,ginger and mash them roughly .Transfer into a bowl add saffron  grated unsweetened kowa ,coriander leaves  to the mixture  
Step 2:Take the mashed potatoes,carrots and beets into the  bowl and add coriander powder,garam masala,chili powder,salt to taste 
Step 3: Add a tablespoon of oil and mix the ingredients well
Step 4:Now take a deep skillet and heat oil for deep fry .
Step 5: Make  small balls of your desired shape and deep fry them in the oil until golden brown.They should look like this


For Gravy:

Step 1: Take a blender and blend green chilies,ginger,and garlic cloves into a smooth paste.Take another Blending jar and blend the fried onions into a smooth paste
Step 2 :  Now take the cashew and almonds and grind them first into a rough powder without adding water and then add water to the powder and blend again .This need not  to be a smooth paste 
Step 3: Now heat another skillet,add oil and ghee to it.When the oil is ready add spices and when they sputter add the ginger-garlic-chili paste and when oil oozes out add the fried onion paste to the mixture 
Step 4:When Oil oozes out the mixture add coriander powder,salt ,chili powder,turmeric and garam masala and let it fry for a min and then add the cashew paste .
Step 5: Let the cashew paste fry for a while then add water to prepare a thick gravy .Let it sit for 10 min until the gravy consumes the taste of the ingredients added 
Step 6: when you think the gravy is ready finally see for the taste of the salt and add yogurt ,kasuri meethi ,sugar to the gravy
Step 7:Cook for an extra two  minutes and switch the stove .Now arrange the koftas on a plate and pour the gravy over them 
Step 8: Garnish with coriander and kasuri methi leaves 


Tips:


  • If you feel the potato mixture for koftas is too mushy add some rice flour and all purpose flour to it while making the balls 
  • Don't blend the cashew paste too smooth .Actually when you blend it roughly you can get the taste of the dry fruits when eat the curry 
  • If you like to make a smooth paste of cashew and almonds soak them over night before you prepare the curry
  • Green chilies and ginger for kofta need to be roughly mashed to yield the taste when you bite the koftas
  • You can add tomato puree or aamchur powder instead of Yogurt both yield the same taste 
  • Make the curry spicy or mild the recipe i have shown is a spicy one you can alter the measurements for mild serving
