Moong Dal Kichidi:
You might have tasted this Kichidi some time or the other which is very nutritious and tasty.Try this recipe on your fasting to get the energy needed .
Ingredients:
Rice 1 cup
Moong Dal 1/4 cup
Potato medium sized 1
Carrot Medium sized 1
Green Peas 1/4 cup
Curry Leaves 10
Green Beans 4
Cauliflower 10 to 15 florets (You can replace cauliflower with broccoli )
Tomato 2
Coriander chopped for garnish
Green chilies 6
Ginger a small piece
Cumin Seeds 1/4 teaspoon
Mustard seeds 1/4 table spoon
Bay leaves 2
Cashews few
Oil 2 table spoon
Ghee 1/2 table spoon
Turmeric a pinch
Salt for taste
Cooking Time:
Preparing Time: 10 minutes
Cooking Time: 25 minutes
Method:
Step 1: Chop all the vegetables taken expect for the Green chilies and ginger .Blend green chilies and ginger into a smooth paste .
Step 2: Take a deep pan or a cooker add oil and when ready add tempering .When it sputters add Cashews when they turn brown add the ginger- green chili paste and fry until it oozes oil.
Step 3: Now add cauliflower florets and cook for a minute until they become tender then add chopped potatoes and carrots and cover it with a lid for a minute or two until they become a little tender .
Step 4: When potatoes and carrots tender a little bit add green beans,tomato and green peas and cook it for a minute again
Step 5: Finally add moong dal, rice and fry it for a minute and add sufficient amount of water ,salt and turmeric , cover the cooker or the pan with a lid until it is done .
Step 6: When Kichidi is done remove the lid , add ghee and chopped coriander leaves on top and mix it before serving. This goes good with curd or any chutney prepared with yogurt.
Veggie Chops:
Mixed vegetable curry dipped in batter and fried to get a unique savory .This is even one of the simple foods that can be prepared with less efforts

Cilantro chopped 1/4 cup
Green Peas 1/4 cup
Capsicum 1/8 cup chopped
Bread crumbs
Corn flour 5 table spoons
Salt for taste
Garam masala 1/4 teaspoon
Coriander Powder 1/2 table spoon
Oil for deep frying
Cooking Time:
Preparing Time: 20 minutes
cooking Time: 20 minutes
Method:
Step 1: Chop all the ingredients taken except for green chilies . Boil them and mash roughly .Now slice the green chilies length wise .
Step 2: Take one table spoon of oil ,when heated add green chilies, mashed vegetables .Cook for 4 or 5 minutes then add garam masala salt,and coriander powder and cook again for another 3 minutes.
Step 3: Add chopped coriander leaves and let the curry cool. Prepare batter with corn flour ,water and a little of salt which has the consistency same like bajji .
Step 4:Heat oil for deep frying. Now make small oval or round shaped balls with the curry prepared .
Step 5:Dip them in batter and then roll them over bread crumbs ,so that the batter sticks to the chops
Step 6: Deep fry the chop until they turn golden brown color .Serve hot with tamarind date chutney .
